SUGAR-FREE RICE CAKE WITH FROZEN-SPICED PAPAYA

Ingredients for Rice Cake
2 cups

Dona Maria® Miponica® Brown Rice
No Calorie Sweetener
Canned Coconut Milk
Pandan Leaves
Garnish Mint Leaves

for Frozen-Spiced Papaya
150g
1⁄2 tsp.
1⁄2 tsp.
1 Tbsp.
1⁄2 Tbsp.
Ripe Papaya, Ball Shape
Yellow Curry
Cinnamon Powder
Freshly Squeezed Lemon Juice
No Calorie Sweetener

Procedures
for Spiced Papaya:
1. In a silver bowl, combine all ingredients and toss.
2. Put it in a freezer overnight.
For Rice Cake:
1. To cook Doña Maria® Miponica® Brown Rice, use a rice cooker. Follow the cooking procedure stated at the back of the packaging.
2. In a separate saucepan over medium heat, combine coconut milk, pandan leaves and sweetener. Stir consistently and boil until thickens.
3. On a separate pan, stir in brown rice and gradually incorporate the mixture. Blend well by continuously stirring until it thickens and is difficult to handle.
4. Remove from heat and spread the rice on a baking pan.
5. Cut into squares and top with frozen-spiced papaya. Garnish with mint leaves.
