BITTER GOURD BROWN RICE SALAD

Freshly Squeeze Lemon Juice

Bitter Gourd, Seeded, Julienne
Cup White Onion, Jullienne
Cherry Tomato, Cut Into Half
Red Apple, Cucumber, Seeded, Julienne
Cooked Doña Maria® Jasponica® Brown Rice
to taste Salt
to taste Pepper
Procedures
1. In a bowl, marinate bitter gourd, cucumber and white onion with apple cider, water, honey and lemon juice for 2 hours and chill. Season with salt and pepper.
2. Strain the marinated bitter gourd, cucumber and white onion and place it on a separate bowl with cherry tomatoes, red apple and Doña Maria® Jasponica® Brown Rice.
3. Add olive oil with the marinade to make an apple cider vinaigrette. Fold 1/2 cup of it with the salad. Chill Serve.
